Description

Made with simple and straightforward ingredients this German inspired Feigenwolkchen Cookies are a must bake. Feigenwolkchen in German means "little fig clouds" Sandwiched between fluffy sugar cookies, fig jam adds a punch of fruity flavor to these sandwich cookies. Allow the dough to rest and chill for at least 30 minutes before shaping with cookie cutters. Sandwich the cookies with the fig jam in between, brush with an egg wash, and sprinkle with superfine sugar before baking.

Ingredients

300 grams flour
200 grams margarine
100 grams superfine sugar
1 egg yolks
2 tablespoons heavy cream
fig jam
1 egg whites

Directions

1Preheat the oven to 200 degrees Celsius.
2Mix the flour, margarine, sugar, egg yolk, and cream until smooth.
3Refrigerate for 30 minutes.
4Stretch the dough and cut out the cookies using cookie molds.
5Take one cookie and add a spoonful of fig jam in the center. Place another cookie on top. Brush the cookie borders and surface with egg white. Sprinkle with superfine sugar.
6Bake for 12 to 15 minutes.
7Allow them to cool and serve.
