Ingredients

- 1 1/4 pounds fava beans (frozen)
- 1 tablespoon oil
- 4 ounces bacon (cut into pieces)
- 6 shallots (small, halved)
- 1 green onion (cut into rings)
- 3 tablespoons olive oil
- 1/4 cup pitted black olives
Directions
- Blanch the fava beans in boiling water for 2 mins. Drain and rinse under cold water, then squeeze the beans from their skins.
- Heat the oil in a pan, and cook the bacon and shallots for 4 mins, then add the beans and cook for 3 mins. Add the green onion, olive oil, and olives, season with salt and pepper and serve immediately.
