  • 2 cups yellow peas (split)
  • 4 1/2 cups water
  • 2 cloves garlic
  • 1 onion (chopped)
  • 1 tablespoon extra-virgin olive oil
  • salt
  • 10 Greek olives
  • 1 tablespoon capers (rinsed, drained)

    1. Combine split yellow peas, water, garlic, ¾ of the chopped onion, and olive oil in a medium pot, cover, and bring to a boil..
    2. Reduce heat to medium-low and simmer for 40 – 45 minutes (may take longer, depending on large the split peas are), stirring occasionally, until peas are very soft and mushy..
    3. Remove from heat and mash with a potato masher until very soft. May have to add additional liquid to make a thick, creamy texture, without being runny or too dry.
    4. Heap on a platter and top with remaining chopped onion, olives, and capers.
