Description

Lemon curd might be the most popular form of this ultra creamy spread, but other fruit flavors can be equally delectable, such as the raspberries in this recipe. Making curd is sort of a cross between jam and custard, with the fruit being cooked with cream, egg, and sugar (and butter here) until thickened. This curd is also thickened with gelatin, for extra stability. Pureeing and straining out the seeds is what gives the curd its velvety texture.

Ingredients

  • 190 grams raspberries
  • 1 eggs
  • 75 grams sugar
  • 30 milliliters cream
  • 70 grams unsalted butter
  • 5 grams corn starch
  • 1/2 gelatin sheet (colorless)

Directions

  1. 1Place the gelatin sheet in a bowl with cold water.
  2. 2Beat the egg with sugar and corn starch until you obtain a homogeneous mixture.
  3. 3Add the raspberries and the cream and heat this mixture over low heat, stirring until it starts boiling.
  4. 4Stir until it starts getting thicker. Add the butter and stir well. Remove from the heat.
  5. 5Squeeze the gelatin sheet and stir in the raspberry mixture until it dissolves.
  6. 6Place this mixture in a blender and grind it until the raspberries become seedless.
  7. 7Allow the mixture to cool down and pour it into a sterilized glass jar.
  8. 8Store in the refrigerator until you serve.
