Description

Farfalle, otherwise known as bowtie pasta, is the base of this delicious pasta dish featuring pan-cooked chicken and caramelized vegetables. This is a dish that will go over with anyone in the family.

Ingredients

  • olive oil
  • 1 onions (large, chopped)
  • 2 leeks (chopped)
  • 5 cloves garlic (chopped)
  • 1 teaspoon white sugar
  • salt (to taste)
  • 400 grams bow-tie pasta
  • 2 chicken breasts (cut into slices or cubes)
  • 1/2 lemon (small)
  • 1 can garbanzo beans (drained)
  • 12 chives (chopped)

Directions

  1. 1Start by heating a skillet with a little olive oil.
  2. 2When the olive oil gets hot, add the onion, leek, and garlic.
  3. 3When the onion and leek starts to get brown, add the sugar and mix everything very well.
  4. 4If necessary, add more olive oil.
  5. 5Meanwhile, heat a pot with water seasoned with salt.
  6. 6When the water starts boiling, add the pasta and cook for 8 to 10 minutes.
  7. 7Drain pasta and set aside.
  8. 8Add the chicken breast to the skillet with the onions and leeks. Season with salt and lemon juice and let it cook until it is golden.
  9. 9Before removing from heat, add the garbanzo beans, mix and cook for another 2 to 3 minutes.
  10. 10Put the pasta back in the pan and add the meat mixture and the chopped chives. Mix everything and serve.
