Ingredients

  • 1/2 large tomato (chopped coarsely)
  • 2 tablespoons flat leaf parsley leaves (coarsely chopped fresh)
  • 1/2 persian cucumber (small, chopped coarsely)
  • 1 spring onion (large, chopped coarsely)
  • 1/3 pound red cabbage (shredded)
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 6 falafel balls (prepared mini)
  • 2 pita breads (small)
  • 1/2 cup baba ghanoush
  • 8 chili peppers (small pickled, drained, optional)

Directions

  1. For the salad, combine tomato, parsley, cucumber, spring onion, cabbage and combined oil and lemon juice in a medium bowl. Season to taste.
  2. Heat falafel in microwave 1 min on high, or until heated through. Break up with a fork.
  3. To assemble, cut pita in half. Spread with baba ghanoush. Fill with falafel, salad and peppers, if using. Serve immediately.
