Description

Vegetarians rejoice, this Falafel recipe is just for you, although carnivores are welcome to enjoy as well. Made with chickpeas as the base, these falafel balls are full of the flavors of savory herbs and spices. Fried until crisp and golden, this recipe includes instructions for making a creamy yogurt dipping sauce. You can serve this Falafel in a pita with sprouts or fresh greens or you can eat them as a finger food, dipping each ball into the yogurt sauce.

Ingredients

  • 150 grams chickpeas
  • 1 garlic cloves (peeled)
  • 5 sprigs fresh parsley
  • 2 sprigs fresh coriander
  • 1 lime
  • 1 teaspoon ground cumin
  • 1 1/2 teaspoons sweet paprika
  • 1 teaspoon rosemary (ground)
  • 1 tablespoon flour
  • 1 teaspoon yeast
  • paprika

  • ground black pepper
  • olive oil
  • 150 grams plain yogurt
  • 1/2 lime
  • 2 tablespoons vinegar
  • 2 tablespoons mayonnaise
  • 1 tablespoon sesame seeds
  • salt
  • ground black pepper

Directions

  1. Soak the chickpeas overnight in plenty of water.
  2. The following day, chop the garlic, parsley, and coriander.
  3. Drain the chickpeas and place in the food processor. Add the garlic, parsley, coriander, lime juice, 1 teaspoon water, cumin, sweet paprika, rosemary, paprika, flour, yeast, and a pinch of salt and black pepper.
  4. Heat plenty of olive oil in a saucepan.
  5. Shape the chickpea dough into plum-sized spheres. Once the oil is hot, add the spheres and fry for 5 minutes or until golden brown all over.
  6. Place the falafel on paper towels to absorb the excess oil.
  7. Mix the yogurt, lime juice, vinegar, mayonnaise, parsley, and sesame seeds. Season with a pinch of salt and black pepper.
