This tortilla is not a flat bread to be filled with cheese or other fillings. A variation of a traditional Spanish tortilla, this delicious egg casserole is stuffed with savory flavor. Incorporating potatoes, ham, sausage, and gouda, this breakfast casserole has it all while remaining gluten free.

Ingredients

  • 2 cups potatoes (cooked, leftover)
  • 1 can sausages (slices)
  • 100 grams ham slices
  • 100 grams gouda cheese (Dutch, diced)
  • 5 eggs
  • 1 natural yogurt
  • 1 tablespoon mustard
  • salt
  • ground black pepper
  • garlic powder
  • 100 grams mozzarella cheese (grated)
  • 3 tablespoons fried onions (ready made)

Directions

  1. Place the boiled potatoes broken in small pieces in an ovenproof pan.
  2. Cover with the sausages, ham, and Gouda cheese.
  3. In a bowl, mix the eggs with the yogurt and mustard. Season with a pinch of salt, pepper and garlic powder. Beat well.
  4. Pour this mixture on the sausage mixture in the baking pan.
  5. Sprinkle generously with mozzarella cheese and fried onions.
  6. Put in the hot oven until well browned, and the eggs are completely cooked.

This baked casserole like dish is great. It is really creamy and has some great flavors all baked into one. The Gouda cheese is a perfect choice for this dish. Having potatoes as a base is perfect, and the bottom gets a nice crisp to it after baking. This recipe is great for a complete, one pan meal for dinner.
