  • 1/2 cup green beans (cut in 1 inch pieces)
  • 1 fresh corn (cut off the cob)
  • 2 cups baby spinach leaves (packed)
  • 15 ounces kidney beans (drained and rinsed)
  • 1 1/2 cups vegetable broth
  • 2 tablespoons tamari (soy sauce or coconut aminos)
  • 1 1/2 teaspoons thyme
  • 2 teaspoons fresh rosemary (minced, or 1 tsp. dried)
  • 1/4 teaspoon sage
  • 1 tablespoon cornstarch (…add more as needed to thicken)

My whole family loved this! I added a few extra veggies I had in my fridge, and used spelt milk in the potatoes. Great mix of spices - thanks for the recipe!
