- sirloin tip
- 1/2 pound salt
- 1 clove garlic (crushed)
- Marinate roast overnight in mixture of 3 parts red wine vinegar to 1 part olive oil, using enough marinade to cover one half of meat, adding a lot of freshly ground pepper, salt and mashed garlic clove.
- Turn occasionally.
- Place in roasting pan and bake at 400 degrees for 20 minutes per pound if you want it rare, 25 minutes for medium and longer for well done.
- May also be cooked out on the grill and turned once.
- This takes longer, but tastes better.
