Extra Virgin Olive Oil Chocolate and Hazelnut Cookies

Description

Made with a mixture of all-purpose flour and ground hazelnuts, these chocolatey Italian olive oil cookies require not much effort to make. However, the dough does need to chill in the refrigerator before it's rolled out and cut using a cookie cutter, so allow enough time for that. They'll keep in an airtight container at room temperature for three or four days. Enjoy them with a cup of hot chocolate.

Ingredients

180 grams flour
150 grams hazelnuts (toasted and ground)
150 grams sugar
80 grams cocoa (bittersweet, powdered)
130 grams extra-virgin olive oil
2 egg yolks
1/2 teaspoon baking powder
salt

Directions

1Knead together the flour, hazelnuts, sugar, cocoa, oil, egg yolks, baking powder, and a pinch of salt.
2Shape the dough into a ball and cover it in plastic wrap. Refrigerate the dough for approximately 40 minutes.
3Preheat the oven to 170C.
4Roll out the dough to a thickness of 1/2 centimeter and use a round cookie cutter to cut out the cookies.
5Place the cookies on a wax paper-lined baking sheet and bake for approximately 13 minutes.
6Remove the cookies from the oven and cool them on a wire rack.
