Description

Tender lobster in the base in this bold salad. Fragrant Asian ingredients such as curry powder, lime zest, and mango add tons of flavor, making this dish one that you will return to again and again. A bed of lettuce helps make this salad into a meal and adds a bit of fresh crispness. Add some grains to this salad to make it a little bit more filling and a complete meal.

Ingredients

1 lobster (cooked and shelled)
1 slice mango (ripe)
2 tablespoons yogurt (Fjord)
1/4 teaspoon curry
1/4 teaspoon lime zest (finely grated)
sea salt
arugula (or mesclun salad mix)
1 tablespoon olive oil
1 teaspoon lime juice

Directions

1In a blender, mix the yogurt, curry powder, lemon zest, and diced mango. Mix well. Season to taste. Cut lobster in chunks and mix with the mango sauce.
2In a separate bowl, mix the salad with olive oil, lemon juice, and sea salt to taste.
3In pretty glasses, place the lobster on top of the the salad. Serve immediately.
