These lemon square are easy to make and equally delicious. Fresh lemon flavor bursts through each bite. Topped with cinnamon and sugar, each square is packed with yummy flavors. A great option for afternoon company.

Ingredients

  • margarine (to taste)
  • 2 eggs
  • 100 grams margarine
  • 1 tablespoon lard
  • 0.5 liters milk
  • 1 teaspoon baking powder
  • 350 grams sugar
  • 1 lemon
  • 500 grams flour
  • powdered sugar (to taste)
  • cinnamon (to taste)

Directions

  1. Preheat oven to 180 degrees Celsius.
  2. Grease a tray or glass baking dish with margarine and set it aside.
  3. In a bowl, mix the eggs very well, then add the softened margarine, lard, milk, baking powder, sugar, and lemon zest and continue to mix well.
  4. Once the ingredients are well mixed, add the flour slowly, stirring the mix gently.
  5. Pour the dough into the greased baking tray and bake for about 25 to 30 minutes.
  6. Check to see if it is done. Remove it from the oven and let it cool.
  7. Once cold, sprinkle with a good amount of cinnamon and powdered sugar.

I love lemon squares but couldn't find an easy recipe other than something in a box. These are great homemade treats. Love topping the squares with cinnamon at the end too. The lemon taste is bursting through with flavor and the squares are nice and moist after cooling. Makes a lot of squares, especially if you cut into smaller pieces for dessert.
