Description

Banish the mid-morning and mid-afternoon drag. This cake powers you through those times when you just don’t quite have enough energy to make it through your day. It’s loaded with walnuts, cranberries, figs, dates, and apricots to supply you with the energy you need.

Ingredients

  • 100 grams flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 140 grams sugar
  • 300 grams walnut pieces (pecans or walnuts mixed nuts)
  • 60 grams dried cranberries
  • 10 dried fig (cut into wedges)
  • 15 grams dried date (chopped)
  • 80 grams dried apricot (cut into wedges)
  • 3 large eggs
  • 1 teaspoon vanilla extract

Directions

  1. 1Preheat oven to 150 degrees Celsius.
  2. 2In a bowl combine the flour, baking soda, baking powder and salt.
  3. 3Add the sugar, nuts and dried fruits.
  4. 4Mix well to coat fruit and nuts with sugar / flour.
  5. 5In a bowl beat the eggs, and add vanilla.
  6. 6Add the egg mixture to the dry ingredients and mix well.
  7. 7Pour into a greased cake pan and bake for 60-75 minutes.
  8. 8Let it cool on a rack and slice finely.
