Banish the mid-morning and mid-afternoon drag. This cake powers you through those times when you just don’t quite have enough energy to make it through your day. It’s loaded with walnuts, cranberries, figs, dates, and apricots to supply you with the energy you need.

Ingredients

  • 100 grams flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 140 grams sugar
  • 300 grams walnut pieces (pecans or walnuts mixed nuts)
  • 60 grams dried cranberries
  • 10 dried figs (cut into wedges)
  • 15 grams dried dates (chopped)
  • 80 grams dried apricots (cut into wedges)
  • 3 large eggs
  • 1 teaspoon vanilla extract

Directions

  1. Preheat oven to 150 degrees Celsius.
  2. In a bowl combine the flour, baking soda, baking powder and salt.
  3. Add the sugar, nuts and dried fruits.
  4. Mix well to coat fruit and nuts with sugar / flour.
  5. In a bowl beat the eggs, and add vanilla.
  6. Add the egg mixture to the dry ingredients and mix well.
  7. Pour into a greased cake pan and bake for 60-75 minutes.
  8. Let it cool on a rack and slice finely.

I have never been a fan of anything energy related as they usually taste bad; however, I will be using this recipe when I need a boost. It was did not have that overwhelming or bitter taste like other energy cake recipes.
