Ingredients

  • 1 endive
  • 80 grams turkey ham (cooked)
  • fine salt (as needed)
  • mustard (grains, freshly ground, as needed)
  • olive oil
  • fresh parsley (as needed)
  • 50 grams cheese (Sao Jorge unpasteurized, or similar)
  • raspberry vinegar

Directions

  1. 1Preheat oven to 200 degrees Celsius.
  2. 2Cut the endive into 4 equal pieces, then place it in a glass oven pan with the inside facing up.
  3. 3Roll the slices of ham around the endive.
  4. 4Then, season with salt, ground mustard, a drizzle of olive oil, fresh parsley, pieces of cheese, and finally, the raspberry vinegar.
  5. 5Bake for about 15 min at 200°, but be careful not to burn the leaves; if necessary, lower the oven temperature, or shorten the cooking time.
