Enjoy endive like never before. You’ll cut out the bitter parts of this plant before sweetening by adding apples. Speck and cheese add savory flavors. To make this dish, you’ll simply saute the endive leaves and then arrange them in a dish with the other ingredients and bake.

  • 8 endives
  • 3 tablespoons olive oil
  • 1/2 lemon juice
  • 20 grams butter
  • 8 slices speck
  • 2 apples (Reinette)
  • salt
  • ground black pepper
  • 6 3/4 fluid ounces heavy cream (20 cl)
  • 100 grams grated Parmesan

    Directions

    1. Remove the outer leaves of the endives. Rinse and dry them. Cut the endives in 2, lengthwise. Remove the core to remove any bitterness.
    2. Heat the olive oil in a frying pan and add the endives and the lemon juice. Make them melt over low heat for 20 minutes. Drain thoroughly.
    3. Preheat oven to 180 degrees Celsius.
