  • 3 large garlic cloves (minced)
  • 2 1/2 teaspoons chili powder
  • 1 1/2 teaspoons cumin seed (toasted, freshly ground)
  • 2 cups chicken broth
  • 3 cups tomato sauce
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 tablespoon vegetable oil
  • 1 pound skinless chicken breasts (boneless, or thighs, cubed)
  • 1 1/2 cups diced onions
  • 1 pinch kosher salt
  • 1 clove garlic (minced)
  • 1 teaspoon dried oregano
  • 12 corn tortillas (6-inch)
  • 3 cups queso fresco (shredded)
