  • 1 pound ground sirloin ([or equivalent; I use local/pasture-raised/grass-fed])
  • 1/2 cup peppers (diced, [bell pepper and/or jalapeno])
  • 1/2 onion (diced)
  • 1/4 cup salsa (your favorite, or taco sauce)
  • 3 teaspoons chili powder
  • 3 teaspoons garlic powder
  • 2 teaspoons cilantro (dried, or parsley)
  • 1 teaspoon cumin
  • 1/4 teaspoon salt
  • 12 ounces egg noodles ([or your favorite pasta!])
  • 2 cups shredded cheese (your favorite grated/)
  • cilantro
  • green onion
  • 30 ounces tomato sauce (I use this BPA-free sauce)
  • 16 ounces vegetarian refried beans
  • 1 cup chopped onion
  • 3 tablespoons hot sauce (your favorite)
  • 1 1/2 tablespoons chili powder
  • 1 1/2 tablespoons garlic powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/2 cup diced onion
  • 1/2 cup diced tomato
  • 1/4 cup jalapeno (diced)
  • fresh cilantro
  • hot sauce
  • squirt (lime juice, if you have it!)
  • 1 pinch salt (to season)
