I replaced the enchilada mix and the tomato paste with a can of enchilada sauce. I used a little extra cheese to sprinkle on the top and served with fresh lettuce leaves, diced tomatoes and steamed white rice on the side. If you want a richer taste for the tortillas you can drizzle them with some oil and heat the on a skillet before adding them to the layers. A very tasteful casserole!
