Description

Pollo encacahuatado is a traditional Mexican recipe that features chicken in a spicy peanut sauce. Make your own at home with this recipe for Encacahuatado Spicy Peanut Sauce with Chicken. Boiled and then pureed, the peppers are added to a mixture of pureed tomatoes, chopped peanuts, onion, garlic and cinnamon to make a thick savory sauce for the chicken. Use chicken leg or thighs for this recipe.

Ingredients

6 chicken pieces (legs, thighs)
2 liters water
2 tablespoons salt
3 cloves garlic
1/4 onions
1 cup water
1 chili (guajillo, seeded and deveined)
1 chipotle chile (seeded and deveined)
300 grams tomatoes (ripe)
1/4 onions
8 black peppercorns
5 allspice (grains)
2 clove
3 cloves garlic
1 1/2 cups peanuts (peeled and roasted)
1 piece cinnamon sticks
2 1/2 cups chicken broth
vegetable oil
salt (to taste)

Directions

1Place the chicken, water, salt, garlic, and onion in a large saucepan. Cook over medium heat until the chicken is cooked.
2Set aside and separate 2 1/2 cups of the broth to use in the sauce.
3Heat the water. Bring to a boil and add the chilies.
4Once the chilies have softened, puree until smooth in the blender. Sift and set aside.
5Separately, puree the tomato, onion, peppercorns, allspice, cloves, garlic, peanuts, cinnamon stick, and chicken broth until smooth. Sift and set aside.
6In a saucepan, heat the oil and add both mixtures. Bring to a boil and lower the heat.
7Cook for another 20 minutes, stirring occasionally.
8Season with salt and remove from heat.
9Serve the chicken and pour the sauce on top.
