- 1 1/2 cups milk (I used almond milk)
- 1 1/2 cups granulated sugar
- 1/2 vanilla bean (split and scraped, pod and beans reserved)
- 3 large egg yolks
- 2 large eggs
- 1/2 cup cornstarch
- 9 bananas (medium, ripe but firm, sliced into ½ inch thick slices)
- 1 Italian meringue (recipe)

All around success despite necessary substitutions. No heavy cream so substituted half and half for the cream and milk in the recipe. No vanilla bean so half a tablespoon vanilla extract beaten into the egg, sugar, cornstarch mixture. Wonderfully enthusiastic response from a houseful of pie makers. This is now my go-to banana cream pie recipe. 7 bananas, how wonderful!
