Ingredients

  • 1 teaspoon vegetable oil
  • 1 nopal (large, chopped)
  • 1/2 tomato (chopped)
  • 2 tablespoons onion (minced)
  • chile pepper (Green, chopped)
  • salt
  • ground black pepper
  • 2 eggs

Directions

  1. Add the vegetable oil to a skillet on medium heat. Add the nopal, tomato, onion, and chile pepper. Add pinches of salt and black pepper and mix well. Cover the pan and cook on low heat for 15 minutes. Stir frequently.
  2. Once the nopal has changed color and the liquid has evaporated, add the eggs and mix well.
  3. Cook until the eggs are cooked completely and serve warm.

I had to take the lid off the pot to get the liquid to evaporate then added the eggs. I shredded some panela cheese on top and served with my favorite Mexican sweet bread and coffee. This dish is also good as a breakfast tortilla. Just roll it in up in a flour tortilla!
