  • 1 chile pepper (Serrano)
  • 10 coriander (leaves)
  • 1/3 cup water
  • salt
  • ground black pepper
  • 2 eggs


  1. Grill the chile pepper lightly and then add it to a food processor with the coriander leaves, water, and pinches of salt and pepper. Puree the mixture and set it aside.
  2. Add the eggs to a preheated skillet and scramble them.
  3. Add the sauce to the eggs and stir well.
  4. Cook until the liquid evaporates. Serve the eggs alone or on a corn tortilla.
