Ingredients

  • 2 eggs
  • 3/4 cup pasta sauce
  • 2 tablespoons parmesan cheese (grated)
  • 1/4 cup cheese (melting, such as mozzarella, grated)

Directions

  1. Heat the pasta sauce in a saucepan, add a little water, and bring to a boil. Add the eggs, cover the pan, and let cook for 2 minutes. Remove from heat.
  2. When the eggs are cooked, sprinkle with the parmesan and mozzarella, cover for 1 more minute, and serve.

I have never thought about putting eggs in tomato sauce. I was surprised by the taste. Apparently, this is a Mexican tradition, and my husband can’t get enough of it. I added a bit of mozzarella to go along with the parmesan cheeses. It all seemed to work well together and the conclusion was very tasty too.
