Eggplants Stuffed with Ground Meat and Wild Mushrooms

Description

This recipe will be great for any dinner party. The eggplants are are soft with a sweet flavor while the mushrooms and ground meat bring a salty flavor to the dish. Ready in just 45 minutes, the leftovers can be eaten as a great snack

Ingredients

  • 2 eggplant (small)
  • 1 onions
  • 1 leeks (finely chopped)
  • 1 green bell pepper (finely chopped)
  • 1 red bell pepper (finely chopped)
  • salt
  • pepper
  • 4 wild mushrooms (large)
  • 300 grams meat (ground)
  • 5 tablespoons tomato sauce
  • cheese (grated)

Directions

  1. Preheat the oven to 180C.
  2. Cut the eggplants lengthwise in halves and place them in the oven for 30 minutes.
  3. In a saucepan, saute the onion, leek, and peppers. Season with salt and pepper.
  4. Add the wild mushrooms and cook for another 3 minutes.
  5. Add the ground meat; a few moments before it is done, add the tomato sauce. It will finish cooking in the oven.
  6. Remove the eggplants from the oven and hollow them out using a spoon.
  7. Carefully stuff the eggplant halves with the meat and mushrooms. Add grated cheese on top and place in the oven for a few minutes until the cheese melts.
