Very easy yet tasted like it was baked for hours! Yet another hit to be added to favorite meals!

First time ever cooking eggplant. It was a lot of work but very tasty! I peeled the eggplant and kosher salted it for an hour then rinsed based off what I read online. No bitterness. Made it with angel hair pasta and salad. My husband loved it!!

First time eating eggplant and making this dish - delish! I used San Marzano tomatoes and rather than sauce, I opted for crushed to have a thicker consistency. Another tip that I feel made this dish was peeling the eggplant.

It was delicious. I used cornflakes and Italian seasoning instead of bread crumbs. It turned out great.

it was very tasteful... i used Japanese eggplant out my garden so it was a little harder layering. i also added diced tomatoes to the sauce... it turned out great

This was very easy and turned out great ended up with just one layer of eggplant in an 8x12 baking dish. Served with spaghetti and meat sauce. Used shredded mozzarella

this turned out really good. I enjoyed it. I did use two different cuts of parmesan cheese but that's about it. i used this as a meal prep for my husband and enjoyed it. It's a good change that it has no meat.
