Super easy , worth the time for the dry out stage w eggplant! Have done other recipes wo and difference is amazing! My new go to recipe for eggplant!

Based on this recipe, i built on and added boiled red lentils to the ready made tomato sauce, before i "assembled" the dish in the oven proof tray and put it to the oven. It turned out delicious!

I ended up using breadcrumbs when frying the eggplant because the slices were falling apart by themselves. Otherwise good recipe!
