Great . The longest part is grilling the slices of eggplant but the caramelized surfaces add to the flavour and final look of the dish. I used a very hot grill on my stove and it went by quickly.. It took more oil than the recipe called for to grill the slices but it did not effect the end result. Very tasty and lovely looking. Already a family favourite.
