Baba Ganoush originates from the region known as the Levant on the eastern Mediterranean. It is a dish made from eggplant, tahini, and a blend of spices. This recipe for baba ganoush is light flavored with fresh lemon and garlic, cumin, and parsley. Ready in 40 minutes, this baba ganoush is best served as an appetizer alongside warm pita. Baba ganoush is vegan, vegetarian, and gluten free for those with dietary restrictions.

Ingredients

  • 2 eggplant (large)
  • 1/2 lemon
  • 2 tablespoons olive oil
  • 2 tablespoons tahini
  • 2 cloves garlic (chopped)
  • 1 teaspoon ground cumin
  • salt
  • ground black pepper
  • chopped parsley

Directions

  1. 1Score the eggplants with a knife.
  2. 2Place under a hot grill, 200C, for 20 minutes until roasted.
  3. 3Leave to cool in a colander to allow the juices to run.
  4. 4When cool, peel and cut into chunky pieces.
  5. 5Place the eggplant into a blender with the other ingredients, except the parsley, and blend until smooth
  6. 6Transfer to a dish or plate, drizzle with oil, and garnish with parsley.
  7. 7Serve with pitta bread.
