This light and fluffy no butter cake is made with just the egg whites. A slight hint of apple comes through as the cake substitutes applesauce and natural yogurt for butter. Can be made with gluten free flour for those with gluten intolerances.

Ingredients

  • 9 egg whites
  • salt
  • 250 grams sugar
  • 1/2 cup olive oil
  • 1 plain yogurt
  • 2 tablespoons applesauce
  • 350 grams flour
  • 1 tablespoon baking powder

Directions

  1. Preheat oven to 180 degrees Celsius.
  2. Grease a bundt cake pan with margarine, and sprinkle with flour. Set aside.
  3. Beat the egg whites with a pinch of fine salt. Set aside.
  4. In a bowl, add sugar, oil, yogurt, and applesauce. Whisk for a few minutes until obtaining a fluffy cream. Add the flour and the baking powder, and mix well. Finally add one teaspoon of egg whites, and stir with a spoon from the bottom up without beating. Repeat this step until all the egg whites have been used.
  5. Pour the dough in the cake pan, and bake for 40 minutes, or until done.
  6. Check for doneness with a toothpick, remove from oven, and unmold.

I am pleased to find another gluten-free treat for my daughter. Recipes like this are proof that special diets can still deliver flavor while keeping within guidelines. I make these brownies twice a month and her friends, who not gluten-free, enjoy them as well! Thank you for another flavorful expansion to her list of "approved foods!"
