Ingredients

  • 3 eggs
  • 1 celery stalk (finely chopped)
  • 1/2 cup peas
  • 1/2 cup green beans
  • 1 tablespoon light mayonnaise
  • 1 teaspoon mustard
  • 1/2 teaspoon paprika
  • pepper
  • salt
  • 2 whole wheat tortillas
  • lettuce leaves (approx 4–5)
  • jalapeno peppers (Pickled, 3–4 approx)

Directions

  1. Hard boil the eggs, peel them and chop them up into small pieces.
  2. Mix the eggs, celery, peas, green beans, mayonnaise, mustard, paprika, salt, and pepper in a large bowl.
  3. Heat up the tortillas on a pan or in the microwave.
  4. Set one tortilla on a plate and place one or two leaves of lettuce on top.
  5. On top of the lettuce place approx. 2 tablespoons of the egg salad and some slices of jalapeno peppers.
  6. Roll up the tortilla and close it up with a toothpick before serving.

This is a nice change for an egg salad recipe. It’s very easy to make and is satisfying. I omit the green beans when I make it, but I also add sweet pickle relish on top of the lettuce when I build the wrap. Great lunch wrap!
