Ingredients

  • 3 eggs
  • 1 celery ribs (finely chopped)
  • 1/2 cup peas
  • 1/2 cup green beans
  • 1 tablespoon light mayonnaise
  • 1 teaspoon mustard
  • 1/2 teaspoon paprika
  • pepper
  • salt
  • 2 whole wheat tortillas
  • lettuce leaves (approx 4–5)
  • jalapeno chilies (Pickled, 3–4 approx)

Directions

  1. 1Hard boil the eggs, peel them and chop them up into small pieces.
  2. 2Mix the eggs, celery, peas, green beans, mayonnaise, mustard, paprika, salt, and pepper in a large bowl.
  3. 3Heat up the tortillas on a pan or in the microwave.
  4. 4Set one tortilla on a plate and place one or two leaves of lettuce on top.
  5. 5On top of the lettuce place approx. 2 tablespoons of the egg salad and some slices of jalapeno peppers.
  6. 6Roll up the tortilla and close it up with a toothpick before serving.
