  • 2 tablespoons vegetable oil
  • 1 clove garlic (finely chopped)
  • 1 package frozen mixed vegetables (16 oz., broccoli, red peppers, mushrooms and onions, partially thawed)
  • 1 pound rotelle (or spiral pasta, cooked and drained)
  • 4 ounces cream cheese (softened)
  • 1/2 cup grated Parmesan cheese
  • 1 jar (1 lb. 8 oz.) Ragu® Chunky Pasta Sauce, heated
  • 1 tablespoon finely chopped fresh parsley

    Directions

    1. In 12-inch skillet, heat oil over medium-high heat and cook garlic, stirring constantly, 30 seconds. Stir in vegetables and cook, stirring occasionally, 5 minutes or until vegetables are almost crisp-tender.
    2. Meanwhile, in large serving bowl, toss hot pasta with cream cheese and Parmesan cheese until cream cheese is melted. Evenly pour heated Pasta Sauce over pasta mixture. Top with vegetable mixture and sprinkle with parsley.
