  • 1 pound turkey meat (lean)
  • 1/4 cup chopped celery
  • 6 green pepper (medium sized, any color)
  • 1 can diced tomatoes
  • 1/4 cup shredded cheddar cheese (2% milk)
  • 1/2 cup cooked rice
  • 1/2 tablespoon minced garlic
  • 1 teaspoon cumin
  • 1 teaspoon onion powder
  • 1 pinch salt (and pepper)

    Directions

    1. Pre-heat oven too 400 degrees, lightly spray a cookie sheet with non-stick spray & set aside.*
    2. For the peppers: cut the peppers in half, removing all the core and seeds. Place the peppers face down down on the cookie sheet and roast for 20 minutes.
    3. In a large frying pan, add the pound of turkey meats and chopped celery.
