Really good! So light that you want to eat 3 or more!!! I used plain greek yogurt and flavored it with real vanilla extract. I made 12 cupcakes instead of using a springform pan, let cool completely on a plate then sprinkled with a good helping of confectioners sugar. YUM

Very moist and not too sweet! I added some raspberries and coconut flakes on top. and used coconut oil instead. Definitely a keeper!

So yum! I made this with subs. I subbed the veg oil for coconut, used gluten free all purpose and used coconut sugar instead of traditional refined sugar. It worked perfectly. Love love love!

I made this cake but decided to add slices of pear (because I needed to use up some pears before they went bad) and then drizzled it with honey before baking to get some caramelization. It's in the oven now. Looks yummy - can't wait to eat a big hunk of it!
