  • 2 onions (mediums, chopped)
  • 1 clove garlic (minced)
  • 1 teaspoon olive oil
  • 2 sweet potatoes (mediums, washed and cubed)
  • 1 envelope chili seasoning (/packet of)
  • 1 ounce tomatoes (can whole peeled, tomatoes cut into large)
  • 1/2 cup wheat (uncooked bulger)
  • 2 ounces black beans (cans, thoroughly rinsed and drained)

    Directions

    1. In a large pan, saute onions and garlic in olive oil, until onions are soft and everyone comes into the kitchen to ask what smells so good.
    2. Add 5 cups of water and bring to a rolling boil.
    3. Add sweet potatoes to the water and boil for 10-12 minutes. Sweet potatoes should still be slightly firm when forked.
