Description
Nutritional yeast and cashews make for a creamy, delicious, and vegan take on mac and cheese that will have everyone coming back for seconds. Be sure to plan ahead - the cashews will need 2 to 8 hours to soak. The recipe is a Yummly original created by Sara Mellas.
Ingredients

- 8 oz. raw, unsalted cashews
- Tbsp. nonstick cooking spray
- 1 Tbsp. salt (for pasta water)
- 1 1/2 cups sauerkraut (drained and firmly packed)
- 4 1/2 cups unsweetened cashew milk
- 1/3 cup nutritional yeast
- 2 Tbsp. extra-virgin olive oil
- 6 Tbsp. all-purpose flour
- 3/4 tsp. garlic powder
- 1/2 tsp. paprika
- 1/2 tsp. mustard powder
- 1/2 tsp. turmeric
- 1 tsp. salt (for sauce)
- 1/4 tsp. black pepper
- 1 lb. elbow macaroni
- 4 oz. round buttery crackers (vegan, like Ritz, 4 oz. is about 36 crackers)
- 1/4 cup vegan buttery spread

Directions
- In a large bowl, combine the cashews with enough water to cover them completely. Cover the bowl with plastic wrap and allow to soak at room temperature for at least 2 hours, and preferably 8 hours.
- Preheat the oven to 375°F.
- Spray a 9x13-inch baking dish with nonstick cooking spray. Set aside.

Amazing recipe! "Cheese" sauce is so-so good. Much prefer this recipe to a regular mac and cheese

Great idea. Thought the sauerkraut sounded interesting. This was flavorless really. I shouldnt say entirely flavorless…I could really taste the nutritional yeast. Appreciate the vegan efforts though! Just wasn’t for us.
