  • 1 pound lean ground beef (use beef with less than 10% fat for South Beach Diet)
  • 2 teaspoons olive oil
  • 1 onion (chopped small)
  • 2 teaspoons minced garlic
  • 2 tablespoons dried oregano (preferably Mexican oregano)
  • 2 tablespoons ground cumin
  • 1 tablespoon ancho chile powder (ground, I use ground ancho chile powder from Penzeys, if you don’t have ancho chile powder just use more regular chile powder)
  • 1 tablespoon chile powder
  • 14 ounces beef broth (or use 3 1/2 cups homemade beef stock)
  • 14 1/2 ounces diced tomatoes with juice (petite)
  • 15 ounces pinto beans
  • juice
  • avocado (diced)
  • cheddar cheese (grated, I used Mexican Cheese Blend from Costco which is a lower fat cheese blend)
  • corn chips (for the kids, but not for South Beach dieters)
  • sour cream (use light sour cream for South Beach diet)
  • chopped fresh cilantro
