Ingredients

  • 14 ounces spaghetti (or linguine)
  • 1/2 cup pine nuts
  • 2 tablespoons olive oil
  • 2 cloves garlic (peeled and finely chopped)
  • 5 ounces tuna (drained and coarsely flaked)
  • 4 sprigs dill (finely chopped)
  • 1 lemon (juiced and one half zested)
  • parmesan (grated)

Directions

  1. Cook spaghetti in boiling salted water according to package directions. Toast the pine nuts in a dry pan and leave to cool. Drain spaghetti.
  2. Heat 2 tbsp oil in a pan, sauté garlic for 2 mins. Add spaghetti, pine nuts and tuna. Gently stir and heat for 2 mins, then add dill and lemon zest. Season with salt, pepper and lemon juice.
  3. Pile spaghetti onto a serving plate and drizzle with 4 tsp olive oil. Sprinkle with grated Parmesan. Serve immediately.
