Description

Celebrate the flavors of Asia with this 'stir-fry on a sheet pan' take on roasted veggies. You won't be disappointed.

Ingredients

  • 1 red bell pepper
  • 1 green bell pepper
  • 1 red onion
  • 4 cups broccoli florets
  • 2 tablespoons sesame oil
  • 2 tablespoons honey
  • 1/4 cup reduced sodium soy sauce
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon ground ginger

Directions

  1. 1Preheat the oven to 425F.
  2. 2Line a large sheet pan with parchment paper.
  3. 3Slice the peppers and onion into 1/2 inch squares. Separate the onion layers with your fingers for even cooking.
  4. 4Combine the sesame oil, honey, garlic powder, ginger powder and reduced sodium soy sauce in a large mixing bowl. Mixing the seasonings together.
  5. 5Add the peppers, onion, and broccoli florets to the bowl, and toss to coat.
  6. 6Pour the seasoned veggies on to the lined baking sheet, and spread them out into a single layer.
  7. 7Insert the sheet pan into the oven and bake for 25 minutes.
  8. 8Remove the veggies from the oven. Serve warm.
