Ingredients

  • 1 sweet potatoes (medium)
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 red onion
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1 teaspoon garlic powder

Directions

  1. 1Preheat the oven to 425F.
  2. 2Line a sheet pan with parchment paper.
  3. 3Slice the peppers and onion into 1/2 inch squares. Separate the onion layers with your fingers for even cooking.
  4. 4Chop the sweet potato into 1/4 inch discs, and cut each disc into quarters.
  5. 5Combine the olive oil, salt, and garlic powder in a large mixing bowl. Mixing the seasonings together.
  6. 6Add the peppers, onions, and sweet potato to the bowl, and toss to coat.
  7. 7Pour the seasoned veggies on to the lined baking sheet, and spread them out into a single layer.
  8. 8Bake for 30 minutes.
  9. 9Remove the sheet pan from the oven and allow the veggies to cool slightly.
