Ingredients
- 1 sweet potatoes (medium)
- 1 red bell pepper
- 1 green bell pepper
- 1 red onion
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1 teaspoon garlic powder
Directions
- 1Preheat the oven to 425F.
- 2Line a sheet pan with parchment paper.
- 3Slice the peppers and onion into 1/2 inch squares. Separate the onion layers with your fingers for even cooking.
- 4Chop the sweet potato into 1/4 inch discs, and cut each disc into quarters.
- 5Combine the olive oil, salt, and garlic powder in a large mixing bowl. Mixing the seasonings together.
- 6Add the peppers, onions, and sweet potato to the bowl, and toss to coat.
- 7Pour the seasoned veggies on to the lined baking sheet, and spread them out into a single layer.
- 8Bake for 30 minutes.
- 9Remove the sheet pan from the oven and allow the veggies to cool slightly.
