Ingredients

  • 1 sweet potatoes (medium)
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 red onion
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1 teaspoon garlic powder

Directions

  1. Preheat the oven to 425F.
  2. Line a sheet pan with parchment paper.
  3. Slice the peppers and onion into 1/2 inch squares. Separate the onion layers with your fingers for even cooking.
  4. Chop the sweet potato into 1/4 inch discs, and cut each disc into quarters.
  5. Combine the olive oil, salt, and garlic powder in a large mixing bowl. Mixing the seasonings together.
  6. Add the peppers, onions, and sweet potato to the bowl, and toss to coat.
  7. Pour the seasoned veggies on to the lined baking sheet, and spread them out into a single layer.
  8. Bake for 30 minutes.
  9. Remove the sheet pan from the oven and allow the veggies to cool slightly.

Huge hit with the family! I used onions, green peppers, and Japanese white sweet potato and I roasted a garlic bulb on the side! Yummy!
