    The brown sugar olive oil rub give the roast a great flavor and juices from the roast mixed with the vegetables provide a light and delicious sauce when served. Note: when making this recipe again for more than two people I would double the amount of vegetables for four servings. I cooked a 3 lb loin roast which was sufficient for four or more servings of meat.

    😀we really enjoyed this yummy pork roast! The pork was very moist and great flavor. We also loved the great variety of vegetables. I definitely enjoyed the extra time this recipe gave me to spend on another project that I needed to get done. Thank you once again!
