Ingredients

  • 18 ounces yellow cake mix
  • 2 cups quick cooking oatmeal (uncooked)
  • 1/2 cup raisins
  • 3/4 cup butter (melted)
  • 1 cup applesauce (chunky)
  • 1/4 teaspoon apple pie spice
  • 1/4 teaspoon grated lemon rind

Directions

  1. Line bottom and sides of a 13x9 inch pan with aluminum foil, allowing 2 to 3 inches to extend over sides. Lightly grease foil.
  2. Stir together cake mix, oats and raisins in a large bowl. Stir in butter with a fork until mixture is crumbly and dry ingredients are moistened.
  3. Press HALF of oat mixture evenly into bottom of prepared pan.
  4. Stir together applesauce, apple pie spice and lemon rind. Gently spread over the oat mixture in pan. Sprinkle evenly with remaining oat mixture.
  5. Bake at 375 F (190 C) for 30 minutes or until top is golden brown. Let cool in pan on wire rack for 1 hour.
  6. Lift baked bars from pan, using foil sides as handles. Place on cutting board and cut into bars.
