  • 7 ounces tortilla chips
  • 13.5 ounces kidney beans (rinsed, drained)
  • 2 tomatoes (chopped)
  • 1 green bell pepper (deseeded, chopped)
  • 1/2 red onion (small, finely chopped)
  • 3 ounces mozzarella cheese (grated)
  • 1 avocado (pitted and peeled)
  • 1 lime (juiced)
  • sweet chili sauce (to serve)
  • cilantro leaves (fresh, to serve)

    Directions

    1. Preheat broiler. Arrange tortilla chips in a single layer in a shallow baking dish. Combine beans, tomatoes, pepper and onion. Season. Distribute over tortilla chips. Sprinkle with cheese and broil for 5-10 mins, until hot and bubbling.
    2. Meanwhile, mash avocado with lime juice. Season. Dollop over hot nachos. Serve drizzled with sweet chili sauce and sprinkled with cilantro leaves.

    Easy to make and my Husband loved it! We added some sour cream to the top before serving and I think it added to it. Also, broiling for 5 minutes was too long as some of the chips burned, so keep a close eye on your chips once you put them in to broil!
