- 4 cups cooked rice (1-1 1/3 cup uncooked, depending on rice type)
- nonstick cooking spray
- 3 cups cooked chicken (diced or shredded)
- 2 1/4 cups prepared salsa
- 1/2 cup sour cream
- 2 scallions (large, minced)
- 1 1/2 tsp. ground cumin
- 3/4 tsp. garlic powder
- 1/2 tsp. dried oregano
- 1 tsp. salt
- 1/4 tsp. black pepper
- 1/2 cup shredded Mexican blend cheese (for casserole)
- 1 cup shredded Mexican blend cheese (for topping)

Directions
- Preheat the oven to 350°F.
- Spray a 9x13-inch baking dish with nonstick cooking spray. Set aside.
- Place the rice, chicken, salsa, sour cream, scallions, cumin, garlic powder, oregano, salt, black pepper, and shredded cheese in a large mixing bowl. Fold with a rubber spatula until everything is thoroughly combined.

It was excellent. I make dinner every Saturday evening for usually 8 folks. This was first time made and it's definitely staying on the rotation to make again.The small one in the photo is my "minny me" personal one. 😎

So easy and delicious! Great for leftover rice and frozen leftover rotisserie chicken. I did change it a bit. Did not use scallions or the added salt, and only had 2 cups of salsa in the house. Used 1/4 finely chopped yellow onion and added a whole chopped green bell pepper, about a cup of frozen corn, a can of drained black beans, and a small can of mild chopped jalapeños. Other than that the recipe was the same! Served with sour cream on top.

It was good I added corn and instead of using all the seasoning I just put a pkg of taco seasoning with it. It was really easy and quick. Will do again

I have made this countless times! I’ve landed on a couple permanent tweaks to make this how my family likes it: add a diced green pepper, a small tin of green chilies, and a cup of frozen corn. I think it would be great with black beans too!

This recipe was super easy, and very flavorful! my family loved it! I did use brown rice instead but still delicious.

Excellent! I substituted pork for chicken. The dish was a hit with the whole family (even the pickiest of eaters).
