Easy Mediterranean Fish Skewers

Ingredients

  • 1 1/2 pounds white fish fillets (cut into chunks)
  • 1 lemon (juiced, plus lemon wedges to serve)
  • 2 tablespoons fresh mint leaves (chopped, plus extra leaves to serve)
  • 1 tablespoon honey
  • 2 yellow peppers (cut into 1 inch pieces)
  • 10 ounces anchovy (stuffed green olives)

Directions

  1. Preheat broiler.
  2. Combine fish, lemon juice, chopped mint and honey. Season. Thread onto skewers alternating with peppers and olives. Broil for 6 mins, turning halfway, until lightly browned and fish is just cooked through.
  3. Serve skewers with lemon wedges. Sprinkle with mint.
