  • 1 1/4 cups milk
  • 6 tablespoons unsalted butter
  • 1 teaspoon salt
  • 1/4 teaspoon ground white pepper (or black pepper)
  • 1/3 cup fresh chives (chopped)

    Directions

    1. Peel potatoes and cut into 1-inch pieces.
    2. Put potatoes in a Dutch oven and add enough cold water to cover by 2 inches. Bring to a boil over high heat. Reduce heat to medium and simmer until tender, about 15 minutes; drain.
    3. Meanwhile, combine milk, butter, salt, and pepper in a small saucepan over medium heat, stirring occasionally, until milk is warm and butter melts, 2 minutes.
