  • 3 pounds napa cabbage (2 medium heads)
  • 1/4 cup kosher salt
  • 1/4 cup garlic cloves (peeled and minced)
  • 3 tablespoons ginger (peeled and minced)
  • 1/4 cup fish sauce (I use Thai Kitchen)
  • 3/4 cup pepper flakes (gochugaru, hot, buy here)
  • 5 scallions (green onions, ends trimmed, sliced crosswise 1/2 inch thick)
  • 1 daikon (large, peeled and cut into matchsticks, see how-to)
  • 1 tablespoon palm sugar (or cane)
