Description
This easy baked chicken recipe uses boned chicken breasts to keep the meat tender and moist. My Nana Cardoni used to bake this family-favorite recipe using lard and dill so feel free to use your own animal fat in place of the olive oil.

Directions
- Preheat oven to 375 degrees F... Let breasts hang out on the counter for about 10 minutes to take the chill off. Wash and pat dry the chicken breasts. Place on a roasting rack skin-side up inside a roasting pan
- Place lemons around the roasting rack. (If you are in need of a quick side, this is your opportunity to add some sliced cabbage or small potatoes around the rack)
- Massage olive oil into the chicken breasts and sprinkle with dill. Season with salt and pepper to taste.
- Bake for about one hour or until juices run clear when poked. Temperature should reach 165 degrees F. Cover or tent and let sit 5-10 minutes before serving.
