  • 10 ounces red enchilada sauce (1 can, for bottom of dish and filling)
  • 1/2 yellow onion (medium)
  • 1 bell pepper (medium)
  • 1 jalapeño pepper (small)
  • 2 cloves garlic
  • 1 1/2 teaspoons extra virgin olive oil
  • 12 ounces 85% lean ground beef
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded Mexican style cheese (for filling)
  • 12 soft corn tortillas (6-inch diameter)
  • 10 ounces red enchilada sauce (1 can, for top of dish)
  • 1 cup shredded Mexican style cheese (for top of dish)
  • cilantro (finely chopped, optional, for garnish)

    Directions

    1. Preheat oven to 350°F.
    2. Spoon about half a can of the enchilada sauce into bottom of 9x13-inch casserole dish. Set aside. Reserve the remaining sauce for a later step.
    3. Finely chop yellow onion and bell pepper. Remove seeds from jalapeño and finely dice jalapeño. Mince garlic.
