Calling all garlic and cheese lovers! This is the ultimate roasted veggie recipe for you. Add a little Italian flare to your plate with this herby, cheesey take on classic sheet pan veggies.

Ingredients

  • 1 sweet potatoes (medium)
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 red onion
  • 1 teaspoon garlic powder
  • 3 tablespoons olive oil
  • 1/3 cup shredded parmesan cheese
  • 1 tablespoon italian seasoning
  • 1/2 teaspoon salt

Directions

  1. 1Preheat the oven to 425F.
  2. 2Line a large sheet pan with parchment paper.
  3. 3Slice the peppers and onion into 1/2 inch squares. Separate the onion layers with your fingers for even cooking.
  4. 4Chop the sweet potato into 1/4 inch discs, and cut each disc into quarters.
  5. 5Combine the garlic powder, olive oil, parmesan, Italian seasoning and salt in a large mixing bowl. Mixing the seasonings together.
  6. 6Add the peppers, onions, and sweet potato to the bowl, and toss to coat.
  7. 7Pour the seasoned veggies on to the lined baking sheet, and spread them out into a single layer. Bake for 25 minutes.
  8. 8Remove the veggies from the oven. Serve warm.
